Hand-picked on 7 March, then refrigerated overnight before whole-bunch pressing to burgundian oak barrels (30% new, 35% 2 years old, 35% 3 years old) with full solids. Fermentation with ambient yeast. Batonnage and partial malolactic conversion. The wine was racked out of barrels with full lees to tank in December 2019 before bottling in February 2020. TA 7 g/l, pH 3.28. Restrained notes of melon and oak spice. More obviously oaky on the palate. Crisp, slightly sour finish. Doesn’t seem quite harmonious but plenty of crisp citrus at the core. (JH)
